Ingredients:

For Salad
  • 2 large sweet potatoes, chopped
  • 1 can of chickpeas, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups of kale, stemmed and chopped.
  • Pinch of chili flakes
  • Drizzle of olive oil
For Dressing
  • 1 cup of cashews
  • 2-4 roasted garlic cloves
  • 6 tablespoons of oat milk
  • 1 tablespoon nutritional yeast
  • 2 teaspons of dijon
  • 1 lemon, juiced
  • Pinch of salt

Preheat oven to

350

degrees.

Method:

  1. Place chopped sweet potatoes and chickpeas on parchment paper on a cookie sheet.
  2. Drizzle with oil, sprinkle with cumin and paprika.
  3. Push aside and place garlic cloves for dressing to roast as well.
  4. Roast for 30-35 minutes. Remove garlic after 20-25.
  5. While they roast, all all dressing ingredients to a blender. Blend until smooth.
  6. Place chopped kale, dressing and roasted veggies in a bowl. Stir to combine.
  7. Sprinkle with chili flakes.
  8. Enjoy!
