Ingredients:

  • Avocado, julienne cut
  • Red pepper, julienne cut
  • Mango, julienne cut
  • Cucumber, julienne cut
  • Purple cabbage, julienne cut
  • Carrots, julienne cut
  • Thai basil
  • Circular rice papers
  • Peanut satay sauce (or alternative dipping sauce)

Preheat oven to

degrees.

Method:

  1. Add warm water to a large bowl that is at least a few inches wider than your rice papers.
  2. Rinse the rice paper back and forth in the bowl for around 20 seconds, or until it begins to soften (but not so long it becomes completely soft!)
  3. Clean a spot on your counter and sprinkle some water onto it for your rolling station, and place your soften rice paper there.
  4. Add whatever ingredients you like, roll up, and enjoy with sauce! Standard servings are 3-5 rolls per person.
