Ingredients:

  • 1 package gnocchi/pasta*
  • 1 red pepper
  • 3/4 cup grape or cherry tomatoes
  • 1/2 onion
  • 2 cloves garlic
  • 1 tablespoon tomato paste
  • 1/4 cup soaked cashews
  • 1 tablespoon nutritional yeast
  • 1/3 cup oat milk
  • 1 tablespoon olive oil
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Preheat oven to

400

degrees.

Method:

  • Roughly chop red pepper, tomatoes and onion and peel garlic cloves. Place on baking tray.
  • Drizzle with olive oil and sprinkle with basil, oregano and salt. Toss and bake for 40 minutes.
  • Meanwhile, prepare gnocchi.
  • Once veggies are cooked, add to blender with all remaining ingredients (aside from gnocchi/pasta).
  • Mix with gnocchi/pasta and enjoy!
