Ingredients:
- 1 package gnocchi/pasta*
- 1 red pepper
- 3/4 cup grape or cherry tomatoes
- 1/2 onion
- 2 cloves garlic
- 1 tablespoon tomato paste
- 1/4 cup soaked cashews
- 1 tablespoon nutritional yeast
- 1/3 cup oat milk
- 1 tablespoon olive oil
- 1/4 teaspoon basil
- 1/4 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Preheat oven to
400
degrees.
Method:
- Roughly chop red pepper, tomatoes and onion and peel garlic cloves. Place on baking tray.
- Drizzle with olive oil and sprinkle with basil, oregano and salt. Toss and bake for 40 minutes.
- Meanwhile, prepare gnocchi.
- Once veggies are cooked, add to blender with all remaining ingredients (aside from gnocchi/pasta).
- Mix with gnocchi/pasta and enjoy!
