Maime's Banana Loaf
Ingredients:
1 cup mashed, very ripe bananas (usually about 2 bananas)
1 cup granulated sugar
1/4 vegetable or canola oil
1/2 sour cream
2 eggs, well beaten
1 1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chocolate chips (optional but don't be dumb)
Preheat oven to
325
degrees.
Method:
1. In a large mixing bowl combine bananas, sugar, oil, sour cream and eggs. Mix well.
2. In a separate bowl mix together flour, baking powder, baking soda, salt (and chocolate chips/walnuts/pecans).
3. Add dry ingredients to banana mixture, just until combined.
4. Pour into greased 9" x 5" loaf pan.
5. Bake at 325F for 1 to 1 1/4 hours or until test comes out clean.
6. Cool in pan for 5 minutes before turning out onto wire rack.
