Ingredients:

  • 1/4 cup olive oil
  • 1 yellow onion, chopped
  • 2 carrots, chopped
  • 4 garlic cloves, pressed
  • 2 teaspoons cumin
  • 1 teaspoon curry powder
  • 1/2 teaspoon thyme
  • 1 large can diced tomatos
  • 1 cup lentils
  • 4 cups vegetable broth
  • 2 cups water
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup kale, stemmed and chopped
  • 1 tablespoon lemon juice*

Preheat oven to

degrees.

Method:

  1. Heat olive oil in dutch oven or large pot and sautee onion and carrot until onion is soft.
  2. Add garlic, cumin, curry powder and thyme. Cook for 30 seconds.
  3. Pour in diced tomatoes.
  4. Add in lentils, broth and water, as well as salt and pepper. Bring to boil and then reduce to simmer.
  5. Simmer for 25-30 minutes.
  6. Transfer half of soup to blender and blend until smooth.
  7. Return soup to pot. Add in Kale and cook for another 5 minutes.
  8. Add lemon juice.
  9. Top with sriracha* and enjoy.
