Ingredients:
- 1/4 cup olive oil
- 1 yellow onion, chopped
- 2 carrots, chopped
- 4 garlic cloves, pressed
- 2 teaspoons cumin
- 1 teaspoon curry powder
- 1/2 teaspoon thyme
- 1 large can diced tomatos
- 1 cup lentils
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 cup kale, stemmed and chopped
- 1 tablespoon lemon juice*
Preheat oven to
degrees.
Method:
- Heat olive oil in dutch oven or large pot and sautee onion and carrot until onion is soft.
- Add garlic, cumin, curry powder and thyme. Cook for 30 seconds.
- Pour in diced tomatoes.
- Add in lentils, broth and water, as well as salt and pepper. Bring to boil and then reduce to simmer.
- Simmer for 25-30 minutes.
- Transfer half of soup to blender and blend until smooth.
- Return soup to pot. Add in Kale and cook for another 5 minutes.
- Add lemon juice.
- Top with sriracha* and enjoy.
