Ingredients:

  • Veggies for roasting (we used broccoli, carrots, red pepper, cauliflower, red onion)
  • Noodles of choice (Gluten free)
  • 1 can of Cannellini beans
  • 1 tbsp chicken bouillon (imitation)
  • Garlic Powder
  • Vegan parmesan

Preheat oven to

375

degrees.

Method:

  1. Roughly chop veggies and roast until soft
  2. Boil pasta and reserve 1 cup of pasta water
  3. Add pasta water, cannellini beans, chicken bouillon to blender and blend until smooth.
  4. Add garlic powder and vegan parmesan to sauce to taste.
  5. Layer pasta and veggies in a bowl, top with sauce and added parm. Enjoy!
