Curly Noodles & Garlic Sauce (Healthy Edit)

Ingredients:
- Veggies for roasting (we used broccoli, carrots, red pepper, cauliflower, red onion)
- Noodles of choice (Gluten free)
- 1 can of Cannellini beans
- 1 tbsp chicken bouillon (imitation)
- Garlic Powder
- Vegan parmesan
Preheat oven to
375
degrees.
Method:
- Roughly chop veggies and roast until soft
- Boil pasta and reserve 1 cup of pasta water
- Add pasta water, cannellini beans, chicken bouillon to blender and blend until smooth.
- Add garlic powder and vegan parmesan to sauce to taste.
- Layer pasta and veggies in a bowl, top with sauce and added parm. Enjoy!
