Ingredients:

  • 4 portions pasta
  • 1.5 cups cashews
  • 2 garlic cloves, roasted
  • 14 tablespoons oat milk
  • 1 tablespoon nutritional yeast
  • 2 teaspoons dijon
  • 1 teaspoon apple cider vinegar
  • a pinch of salt

Preheat oven to

degrees.

Method:

  1. Cover cashews in boiling water and leave to soak for 10 minutes.
  2. After 10 minutes, drain and place in blender, along with almond milk, garlic cloves, nutritional yeast, mustard, apple cider vinegar, and salt. Blend until smooth.
  3. Cook pasta. Drain and reserve 1/3 cup water. Place pasta back in pot.
  4. Add sauce from blender to pot. Stir to combine and add pasta water as necessary to desired consistency.
  5. Enjoy!
