Ingredients:
- 4 portions pasta
- 1.5 cups cashews
- 2 garlic cloves, roasted
- 14 tablespoons oat milk
- 1 tablespoon nutritional yeast
- 2 teaspoons dijon
- 1 teaspoon apple cider vinegar
- a pinch of salt
Preheat oven to
degrees.
Method:
- Cover cashews in boiling water and leave to soak for 10 minutes.
- After 10 minutes, drain and place in blender, along with almond milk, garlic cloves, nutritional yeast, mustard, apple cider vinegar, and salt. Blend until smooth.
- Cook pasta. Drain and reserve 1/3 cup water. Place pasta back in pot.
- Add sauce from blender to pot. Stir to combine and add pasta water as necessary to desired consistency.
- Enjoy!
